Fruit Cake With Zucchini Recipe
Knockout anyone and everyone with this kick ass Fruitcake recipe. If you have a lot of Vegetable on hand then you know its time to make some Fruitcake. A delicious Snack, the Fruitcake completes your meal. Trust me and whip this dish now.
Ingredients
Zucchini 1 cup diced, not shredded
Brandy flavoring 1 teaspoon
Sugar 1 cup
Apple juice 1 cup
Margarine 1/3 cup
Water 2 tablespoons
Dates 1/2 cup chopped
Brandy flavoring 1 teaspoon
Flour 2 cups, unsifted
Salt 1 teaspoon
Baking powder 1 teaspoon
Soda 1 teaspoon
Mixed candied fruits 1/2 cup
Nuts 1/2 cup chopped
Directions
Sprinkle diced zucchini with brandy flavoring; set aside.
Combine sugar, apple juice, margarine, water, and dates; bring to boil.
Boil 2 minutes; cool.
Add brandy flavoring.
Mix together flour, salt, baking powder, and soda; stir into apple juice mixture.
Add zucchini, candied fruits, and nuts; mix well.
Spoon into 2 greased and paper lined 9 x 5 x 3 inch loaf pans.
Bake at 325° for 1 hour or until it tests done.
Cool and chill before cutting.
