Fruit Filled Bars Recipe

Ingredients
Seedless raisins - 1/3 cup, chopped
Cooked prunes - 1/2 cup, chopped
Cooked dried apricots - 1/3 cup, chopped
Granulated sugar - 1/3 cup
Lemon juice - 1 tablespoon
Shortening - 1/2 cup
Evaporated milk - 1/4 cup
Vanilla - 1/2 teaspoon
Sifted flour - 13/4 cups
Salt - 1/2 teaspoon
Confectioners' sugar - 1/3 cup
Directions
GETTING READY
1) Grease an 8-inch-square pan.
MAKING
2) In a saucepan, mix together raisins, prunes, apricots, sugar, and lemon juice.
3) Gently cook till thick.
4) Refrigerate.
5) Cream the shortening well.
6) Blend in the milk and vanilla.
7) Combine and sift the flour, salt and sugar and blend into the shortening and milk.
8) Firmly pat half the dough into the bottom of a square pan.
9) Evenly spread the filling over the dough.
10) Between 2 squares of waxed paper, add the remaining dough and roll out to an 8-inch square.
11) Place over the filling.
12) Place in the oven at 375° F and bake for 30 to 35 minutes.
13) Cut into squares while warm.
14) Cool in a pan.
