Fruit Cheese Topping Recipe
Ingredients
1/2 Cup Sugar
3 Tbs. All Purpose Flour
1 Egg, slightly beaten
1 Cup Combined Pineapple & Apricot Juice
2 Tbs. Butter
1/3 Cup Whipping Cream, whipped
3/4 Cup Grated Cheddar Cheese
Directions
Combine sugar and flour and blend in the beaten egg.
Gradually stir in juices.
Cook over low heat until thickened, stirring constantly.
Remove from heat.
Stir in butter.
Cool.
Fold in whipped cream and spread over chilled gelatin layer.
Sprinkle top with grated cheese.
Chill.
To serve, arrange squares of salad on lettuce.
Makes approximately 18 servings.
May.be used as a dessert, without lettuce, serve a small cookie on the side.
