Ingredients

 
1 small fresh pineapple
 
2 large oranges
 
2 large, firm bananas
 
1 punnet strawberries
 
1 cup plain yogurt
 
2 tablespoons orange juice
 
2 tablespoons lime or lemon juice
 
2 teaspoons chopped blanched almonds
 
1 tablespoon softened butter
 
2 tablespoons honey
 
1 teaspoon grated fresh ginger
 
1/4 cup each of stoned fresh or dried dates, walnut pieces and shelled, unsalted sunflower seeds

Directions

Prepare pineapple fans by shaving off outer skin, then cutting out eyes in the spiral pattern in which they grow. Slice across thinly, cut out core with a small scone cutter and cut each slice in half. Peel oranges and remove skinless segments with a sharp knife. Slice bananas and brush with lemon juice. Wash and hull strawberries. Put all fruit into a bowl and chill, covered, for 2 hours. Put yogurt, juices, almonds, butter, honey and ginger into a blender or food processor and blend until smooth. If making by hand, pound almonds, butter and ginger together until smooth then mix in yogurt, juices and honey. Add dates, walnuts and sunflower seeds to the fruit, pour yogurt mixture over and toss lightly. Serve immediately. Serves 6-8.
