Fruit And Nut Bread Recipe
Ingredients
3 cups buttermilk baking mix
2/3 cup sugar
1/3 cup all purpose flour
1 egg
1 cup orange juice
1 cup chopped dried fruit (apricots, peaches, dates, raisins or figs)
3/4 cup chopped nuts
Directions
Heat oven to 350°.
Grease loaf pan, 9x5x3 inches.
Mix baking mix, sugar, flour, egg and orange juice; beat vigorously 1/2 minute.
Stir in fruit and nuts.
Pour batter into pan.
Bake until wooden pick inserted in center comes out clean, 55 to 60 minutes.
Cool slightly before removing from pan.
Cool thoroughly.
(Can be served immediately.) Wrap and refrigerate.
