Fruit And Cheese Ambrosia Recipe
Ingredients
16-oz. carton cream style cottage cheese
1 cup flaked coconut
4 bananas
1/4 cup lemon juice
14-oz. can prune plums
1 cup red grape halves, seeded
4 large oranges, peeled and sectioned
Directions
Press cottage cheese through a sieve into a large bowl.
Add about 3/4 cup of the coconut and blend well.
Set remaining coconut aside to sprinkle on top of desserts.
Peel and slice bananas into another bowl.
Sprinkle with lemon juice and toss lightly with two forks until bananas are well coated with juice.
Cut plums in half and discard stones.
Add plums to bananas along with grape halves and orange sections.
Toss all fruit lightly to combine.
Take out a few pieces of each fruit to garnish tops of desserts.
Add fruit to cottage cheese mixture and fold together lightly with a rubber scraper.
Spoon into sherbet or parfait glasses.
Top each serving with a little of the reserved fruit and sprinkle with remaining coconut.
Chill for 2 or 3 hours.
