Fruit With Passion Fruit Custard Recipe
Ingredients
| 2 Quinces, peeled | ||
| 1/2 Cup/125 g/4 oz sugar | ||
| 1/4 Cup/60ml/2fl oz sweet | ||
| Dessert wine | ||
| Water | ||
| Passionfruit custard | ||
| 3/4 Cup/185 ml/6 fl oz milk | ||
| Vanilla essence | 1 Teaspoon | |
| Egg yolks | 2 | |
| 1/3 Cup/90 ml/3 fl oz passion fruit pulp | ||
| Double cream | 1/2 Cup (16 tbs), thickened | |
Directions
1. Place quinces in a large saucepan. Add sugar, wine and enough water to cover. Bring to the boil, then reduce heat and simmer for 3 hours or until quinces are tender and a rich pink colour.
2. To make custard, place milk and vanilla essence in a saucepan and heat over a medium heat until almost boiling. Whisk in egg yolks and cook, stirring, until mixture thickens. Remove pan from heat and set aside to cool. Fold passionfruit pulp and cream into custard.
3. To serve, cut quinces into quarters and serve with custard.
