Fruit Stuffed Pork Chops Recipe

Ingredients
6 loin pork chops
Salt to taste
15 dried prunes, soaked
15 dried apricots, soaked
2 cups ginger ale
Orange slices
Maraschino cherries
Directions
Brown chops on both sides in rendered fat.
Season with salt.
Place 3 soaked prunes and 3 soaked apricots on a chop, place a second pork chop on top, and repeat layers of fruit and chops, ending with a chop.
Tie with string.
Place in a shallow baking pan, with the fat side up; pour over 1 cup ginger ale.
Cover and bake in a moderate oven (350°) for 45 minutes; remove cover and continue baking 45 minutes longer, basting with remaining ginger ale.
Garnish with orange slices and maraschino cherries.
