Fruit Salsa With Granola Topping Recipe
Ingredients
| Plums | 3 Medium, pitted | |
| 2 Medium navel oranges, peeled, sectioned, and chopped | ||
| Peach | 1 Medium, pitted | |
| Raspberries | 1 Cup (16 tbs) | |
| Mint | 1 Tablespoon, minced | |
| Crystallized ginger | 1 Tablespoon, minced | |
| Lime juice | 1 Tablespoon | |
| Sugar | 2 Teaspoon | |
| Orange rind | 1 Teaspoon, grated | |
| Orange juice | 2/3 Cup (16 tbs) | |
| 1 Cup low-fat granola without raisins | ||
Directions
Combine first 10 ingredients in a large bowl; toss gently.
Cover and chill.
To serve, spoon 1/2 cup fruit mixture into each individual serving bowl; top each with 2 tablespoons granola.
