Fruit Salad With Lemon Syrup Recipe
Ingredients
50ml lemon juice
60g sugar
1/2 pineapple, cut into chunks
2 tblspn chopped mint
250g strawberries, trimmed and halved
375ml water
2 bananas, sliced
4 passionfruit
3 tblspn desiccated coconut
Directions
Combine the lemon juice, water and sugar in a saucepan.
Bring to the boil, stirring, then simmer for 2 minutes.
Pour the syrup into a jug, allow to cool, then chill.
Combine the bananas, pineapple and strawberies in a bowl.
Cut the passionfruit in half and scoop the pulp into the bowl.
Mix lightly.
Pour the chilled syrup over the fruit, add the mint and coconut and mix well.
