Fruit Omelette Recipe
Ingredients
| Strawberries | 1/4 Cup (16 tbs), sliced | |
| 10 green grapes, cut in half | ||
| 7 peach, peeled and sliced | ||
| Eggs | 3 | |
| Granulated Sugar | 2 Teaspoon | |
| 2 tsp farmer's cheese, shredded | ||
| 3 tsp lowfat blueberry yogurt | ||
Directions
Coat a nonstick skillet with vegetable spray.
Add the fruits and gently saute for 1 minute; remove from skillet.
Respray the skillet.
Combine eggs and granulated sugar replacement and beat well.
Pour into the skillet and cook until set.
Spread fruit over half of the eggs.
Top with cheese.
Fold eggs in half.
Pour a small amount of water into the skillet.
Cover and cook until cheese melts.
Turn out onto a heated plate.
Top with blueberry yogurt.
