Fruit 'N' Wheat Banana Bread Recipe

My kids are so much in love with this Fruit 'N' Wheat Banana Bread that they eat it as fast as I can make. Fruit 'N' Wheat Banana Bread has a delightful blend of fruit and wheat. You will like it.

Ingredients

 
2 cups (480 ml) Fruit 'n' Wheat Cereal
 
1/2 cup (120 ml) currants
 
2 cups (480 ml) whole wheat pastry flour
 
1 tsp (5 ml) cinnamon
 
1/4 tsp (1 ml) salt
 
3/4 tsp (4 ml) baking soda
 
1 1/4 cups (295 ml) mashed banana grated rind of 1 lemon juice of 1 lemon
 
1/2 cup (120 ml) maple syrup
 
1/4 cup (60 ml) canola oil

Directions

Preheat oven to 350°F (180°C).
Combine cereal and currants in a large mixing bowl.
Sift together flour, cinnamon, salt and baking soda.
Add to mixing bowl.
Place mashed bananas in a small bowl.
Add rind and lemon juice, maple syrup and canola oil.
Whisk together.
Add wet ingredients to dry ingredients, stirring to combine gently.
Pour batter into oiled 9-inch loaf pan and bake for 40-50 minutes or until toothpick comes out clean.
