Fruit Meringues Recipe
Ingredients
| 1/2 cup each of pitted dates, dried apricots, and shredded coconut | ||
| 1/4 cup each of glazed cherries and nuts | ||
| Rind of 1/2 orange | ||
| Salt | 1 Pinch | |
| Vanilla extract | 1/2 Teaspoon | |
| Egg whites | 2 | |
| Confectioner’s sugar | 2/3 Cup (16 tbs) | |
Directions
Put fruits, nuts, coconut, and orange rind through food chopper, using coarse blade.
Mix well and form into 1-inch balls.
Add salt and vanilla to egg whites; beat until stiff.
Add sugar gradually, beating well after each addition.
Dip fruit balls into meringue and place on greased cookie sheets.
Bake in preheated slow oven (300° F.) for about 35 minutes.
Cool.
