Ingredients

 
1 1/4 cups QUAKER Oats (quick or old fashioned, uncooked)
 
1/3 cup firmly packed brown sugar
 
1/4 cup all-purpose flour
 
2 tablespoons margarine, melted
 
2 egg whites
 
1 cup (8 ounces) part-skim ricotta cheese
 
1/4 cup (2 ounces) Neufchatel cheese, softened
 
2 tablespoons powdered sugar
 
1/2 teaspoon grated lemon peel
 
4 1/2 cups any combination sliced fresh or frozen fruit, thawed, well drained

Directions

Heat oven to 350°F.
Lightly spray 9-inch pie plate with nonstick cooking spray, or oil lightly.
Combine oats, brown sugar, flour, margarine and egg whites, mixing until moistened.
Press mixture onto bottom and up side of prepared plate.
Bake 15 to 18 minutes or until light golden brown.
Remove to wire rack; cool completely.
Combine cheeses, powdered sugar and lemon peel.
Spread onto oat base; top with fruit.
Refrigerate 2 hours.
Microwave Directions: Combine oats, brown sugar, flour, margarine and egg whites, mixing until moistened.
Press mixture onto bottom and up side of 9-inch microwavable pie plate.
Microwave on HIGH (100% power) 2 1/2 to 3 minutes or until top springs back when lightly touched.
Cool completely.
