Fruit Loaves Recipe
Ingredients
| 500 g/1 lb mixed dried fruit | ||
| 220 g/1 oz soft brown sugar | ||
| 300 ml/1/2 pint cold soaking liquid | ||
| Egg | 1 , beaten | |
| 2 tbls chunky orange marmalade | ||
| 500 g/1 lb self-raising flour | ||
| Ground cinnamon | 2 Teaspoon | |
Directions
Soak the fruit and sugar in the chosen liquid for several hours, preferably overnight.
Grease and base-line one 1 kg/2 lb loaf-tin.
Stir in the beaten egg, the marmalade, then the flour sifted with the cinnamon.
Transfer to the prepared tin, level the top and bake at 180°C/350°F/Gas Mark 4 for 90-100 minutes.
Cool for a few minutes in the tin before turning out on to a wire rack.
Serve sliced, with butter.
