Fruit Leather Recipe
Ingredients
8 pounds apricots or peaches, pitted but not peeled
1/2 cup honey
Coconut Sugar
Directions
Place fruit in a large heavy pot.
Cover, and cook over low heat in enough water to cover until soft.
Drain well.
Remove skins, and puree in a food processor or food mill in batches.
Add honey, mixing in well.
Lightly oil 2 large baking sheets.
Spread fruit pulp evenly on prepared baking sheets.
Place baking sheets in 120°F oven, leaving door slightly ajar, until pulp is dried into sheets, about 12 hours.
Lift gently from baking sheets, and place on wire racks to cool.
When leather has lost its stickiness, dust both sides lightly with Coconut Sugar.
Roll each sheet in wax paper, and store in a cool, dry place.
