Fruit Galaxy Salad Recipe
Ingredients
| 1 8-ounce can dietetic-pack pineapple tidbits | ||
| Cornstarch | 1 Tablespoon | |
| Lemon juice | 2 Tablespoon | |
| Non-caloric liquid sweetener equal to 1/4 cup sugar | ||
| Plain yogurt | 1/2 Cup (16 tbs) | |
| Peaches | 1 Cup (16 tbs), sliced | |
| 1 cup diced unpared apple | ||
| Pear | 1/2 Cup (16 tbs), diced | |
| Banana | 1/2 Cup (16 tbs), sliced | |
| Seedless green grapes | 1/2 Cup (16 tbs), halved | |
Directions
Drain pineapple tidbits, reserving 1/2 cup juice.
In 1 1/2-quart saucepan, gradually stir pineapple juice into cornstarch.
Stir in lemon juice and sweetener.
Cook and stir over medium heat till thickened and bubbly; cool.
Fold in yogurt, then pineapple, peaches, apple, pear, banana, and grapes.
Chill several hours.
