Ingredients

 
4 eggs, lightly beaten
 
1/2 cup (125 ml) sugar
 
1/4 tsp (1 ml) salt
 
1/4 tsp (1 ml) vanilla extract
 
2 cups (500 ml) milk fresh fruit

Directions

–  Preheat oven to 300 °F (150 °C).
–  In a bowl, combine eggs, sugar, salt, and vanilla extract.
–  In a small saucepan, allow milk to barely simmer. Pour into egg mixture and stir.
–  Pour mixture into 8 small ramekins and put them in a baking pan with 1 inch (2,5 cm) hot water. Bake 50 to 60 minutes. Test for doneness by inserting a knife blade in middle of flan. The blade should come out clean.
–  Unmold the flans and serve with fresh fruit (strawberries, raspberries, blueberries, or blackberries).
