Ingredients
| Fruit cocktail | 1 Can (10oz) | |
| Lime gelatin package | 1 | |
| Hot water | 1 Cup (16 tbs) | |
| Ginger ale | 3/4 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| Cottage cheese | 2 Cup (16 tbs), creamed | |
| Mayonnaise or salad dressing - 2 tablespoons | ||
| Pecans | 1/4 Cup (16 tbs), chopped | |
| Lettuce - as required | ||
Directions
GETTING READY
1) Drain the fruit cocktail and place aside.
MAKING
2) In a bowl, add gelatin in hot water.
3) Stir in to dissolve the gelatin.
4) Add ginger ale to stir in.
5) In two bowls, distribute the mixture equally.
6) In one part of the mixture, add lemon juice.
7) Use a 5 cup ring mold to pour the lemon part.
8) Place inside refrigerator to chill until firm.
9) In another bowl, combine cottage cheese and mayonnaise to smooth mixture.
10) Fold in pecans and add remaining gelatin.
11) Pour this mixture over the firm fruit layer.
12) Return inside refrigerator to chill until firm.
SERVING
13) Serve the Fruit Cottage Cheese Ring chilled with Minted Mayonnaise, if desired.
