Raisin Fruit Cookies Recipe
Ingredients
| Seedless raisins | 1 Cup (16 tbs) | |
| Candied orange peel | 2 Tablespoon | |
| Cherries | 1/4 Cup (16 tbs), candied | |
| 1/4 cup finely cut citron | ||
| Walnuts | 1/2 Cup (16 tbs), chopped | |
| Lemon extract | 1/2 Teaspoon | |
| 1/4 cup fruit juice | ||
| Shortening | 1/2 Cup (16 tbs) | |
| Sugar | 1 Cup (16 tbs) | |
| Egg | 1 | |
| All purpose flour | 2 1/4 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Soda | 1/2 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Ground nutmeg | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
Directions
Cover raisins with hot water for 5 minutes; drain and dry on a paper towel and chop.
Combine fruits, nuts, lemon extract and fruit juice.
Stir, and let stand while preparing the dough.
Cream shortening.
Add sugar gradually and cream well.
Beat In the egg.
Add combined dry ingredients and mix until smooth.
Add fruit mixture and stir well.
Let mixture stand for 1 hour.
Press the dough into a greased 13x 9x2-inch cakepan.
Bake at 400° for 12 to 15 minutes.
Cut into strips 3/4 inch wide.
Remove from pan immediately.
Combine fruits, nuts, lemon extract and fruit juice.
