Fruit Compote Recipe Video

When fresh red berries are not available I use the frozen ones. But in my experience, they are often very sharp/sour to the taste - so here is a quick tip to sweeten them.

Directions

MAKING
1. Simply add a little caster sugar to a pan of water. Then add vanilla essence or a scraped vanilla pod and bring to the boil.
2. Then just pour it over your frozen fruit and leave for half an hour or so to let the vanilla infuse with the fruit.

SERVING
3.Et voila! As simple as that! Ready to be enjoyed with, for example, lemon posset, cheesecake, pancakes or with ice-cream - the choice is yours!

TIP
Top tip, also try it with the juice and zest of half a lime and some fresh mint leaves finely chopped - lovely!
