Fruit Coleslaw Recipe
Ingredients
1 red-skinned dessert apple, cored and chopped
2 teaspoons lemon juice
125 g (4 oz) white cabbage, finely shredded
1 small carrot, grated
50 g (2 oz) dates, stoned and chopped
1 tablespoon sultanas
50 g (2 oz) green grapes, halved and seeded
2 tablespoons natural low-fat yogurt
2 tablespoons mayonnaise
Salt and pepper
Directions
Place the apple in a bowl, sprinkle with the lemon juice and toss well.
Add the cabbage, carrot, dates, sultanas and grapes.
Mix together the yogurt, mayonnaise and salt and pepper to taste.
Pour over the salad and toss well.
Pile into a serving dish.
