 Sugar3 Tablespoon
 Water6 Tablespoon
 Lemon juice1 Tablespoon
 150 g-1 kg (1 1/2-2 lb) mixed fruit in season (strawberries, peaches, bananas, apples, pears, grapes, etc.), cored and sliced as necessary
 Double cream284 Milliliter
 Dark brown sugar4 Tablespoon

Directions

Dissolve the sugar in the water in a small saucepan.
Stir in the lemon juice and remove from the heat.
Put the prepared fruit into a flameproof serving dish and stir in the sugar syrup.
Press the fruit down to level the top.
Whip the cream until stiff and spread over the fruit.
Chill until just before serving.
To serve, sprinkle the cream with the brown sugar and grill until the sugar melts.
Serve immediately.
