Fruit and Nut Muffins Recipe
Ingredients
| 1/3 cup / 90 g/3 oz reduced-fat ricotta cheese | ||
| Currants | 1 Tablespoon | |
| Raisins | 1 Tablespoon, chopped | |
| Orange rind | 1 Teaspoon, grated | |
| 2 muffins, halved and toasted | ||
| Pecans | 2 Tablespoon, chopped | |
Directions
Combine ricotta cheese, currants, raisins and orange rind. Spread mixture over muffins, sprinkle with pecans and serve.
