Fruit And Nut Filled Apple En Croute With Spiced Whipped Cream Recipe

|Lemon||1 , rind zested and juice reserved|

|Baking apples||6 (Pippin / Rome)|
|Lemon juice||2 Tablespoon (From 1 Lemon)|
|Dried apricots||3⁄4 Cup (12 tbs), finely chopped|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Egg||1 , slightly beaten (For Egg Wash)|
|Whipped cream||2 Tablespoon|

Cut in the butter and margarine until the mixture resembles coarse crumbs.
Add the lemon zest.
Sprinkle in the water a few drops at a time until the mixture can be gathered into a ball.
Wrap it in plastic and refrigerate it while making the filling.
Peel and core the apples.
Sprinkle with the lemon juice.
In a bowl mix together the apricots, walnuts, and marmalade.
Stuff each apple cavity tighdy with this mixture.
Preheat the oven to 375°.
Grease and flour a 13 x 9-inch baking dish.
Cut the dough into 6 equal pieces and roll each out into a circle, about 6 inches or larger, to enclose the apples.
Center a circle over each apple and pinch the bottom to seal.
Cut away the excess dough, saving it to make decorative shapes such as leaves, which may be attached to the apple with milk or water.
Place the apples in the prepared pan.
Brush the dough with the egg.
Bake the apples for 40 to 45 minutes or until an apple is pierced easily with a cake tester.
Allow the apples to cool for a few minutes.
Beat the cream with the honey.
Add the vanilla and spices and beat until stiff peaks form.
Top the apples with cream and serve.
