Add granulated sugar and stir until dissolved.
Cook and stir until mixture thickens, about 5 minutes.
Remove from heat.
Blend in 1/4 cup butter and the vanilla.
Mix flour, salt and soda.
Cream 3/4 cup butter.
Gradually beat in brown sugar and continue beating until light and fluffy.
Add flour mixture, blending well.
Add oats and nuts; mix until crumbly.
Press half into greased 13x9-inch pan.
Spread evenly with the chocolate-date mixture; top with remaining nut mixture.
Bake at 350° for 35 minutes.
Cool slightly in pan; then cut into bars or squares.
Serve warm with ice cream, if desired.
