Fruit And Cheese Salad Pockets Recipe
Ingredients
| Fruit cocktail | 1 Can (10oz) | |
| 1/2 cup shredded fat-free mozzarella cheese | ||
| Sunflower seeds | 2 Tablespoon, toasted | |
| Celery | 2/3 Cup (16 tbs), diced | |
| Parsley | 1 Teaspoon, chopped | |
| 1/2 cup fat-free ricotta cheese | ||
| 1 tablespoon fat-free mayonnaise | ||
| Red onion | 2 Teaspoon, finley chopped | |
| Ground cumin | 1 Teaspoon | |
| Pita breads | 2 Large, halved | |
| Spinach leaves | 4 | |
Directions
Drain fruit cocktail.
In medium bowl, combine fruit cocktail, sunflower seeds, celery and parsley; mix gently.
Combine ricotta, mayonnaise, onion and cumin in small bowl; mix well.
Gently toss fruit mixture with ricotta mixture.
Spoon into pita bread halves; add 1-2 spinach leaves to each pita pocket
