Beat together eggs, water, salt, and pepper.
In a 6- or 8-inch skillet with flared sides, heat tablespoon of the diet margarine over medium heat till it sizzles and browns slightly.
Tilt the pan to coat the sides.
Pour in half the egg mixture (about 1/2 cup); cook over medium heat.
As eggs set, run a spatula around edge of skillet, lifting eggs to allow uncooked portion to flow underneath.
When eggs are set but still shiny, remove from heat.
Spoon half of the filling across the center.
Using a spatula, carefully lift one-third of the cooked omelet over filling.
Repeat with remaining one-third to overlap.
Gently slide omelet to edge of skillet.
Tilt skillet, then invert to roll the omelet out onto a warm serving plate.
Repeat with remaining egg mixture to make second omelet
