Frozen Cherry-Pineapple Salad Recipe
Frozen cherry pineapple salad is a great dessert salad that can be served in sherbet glasses and is perfect for summer days. Made with dark sweet cherries, crushed pineapple and flavored gelatin, the pineapple cherry salad is combined with cream cheese, pecan nuts and lemon juice and frozen before serving.
Ingredients
1 can (12 ounces) pitted dark sweet cherries, drained (reserve syrup)
1 can (814 ounces) crushed pineapple, drained (reserve syrup)
2 tablespoons lemon juice
1 package (3 ounces) cherry flavored gelatin
1 package (3 ounces) cream cheese
1/2 cup chopped pecans
1 bottle (6 ounces) carbonated cola beverage
Directions
Heat 1/2 cup of the combined reserved syrups and the lemon juice until mixture boils.
Pour boiling syrup on gelatin in large bowl; stir until gelatin is dissolved.
Cool to room temperature.
Cut cream cheese into small pieces.
Stir cheese pieces, fruit, pecans and cola beverage into gelatin mixture.
Chill until slightly thickened.
Spoon mixture into 12 paper lined muffin cups.
Wrap, label and freeze.
Freeze at least 24 hours.
30 minutes before serving, remove Frozen Cherry Pineapple Salad from freezer.
Remove salad from cups; serve on greens as a salad or, if you prefer, serve in sherbet glasses as a dessert.
