Frozen Peach Fruit Salad Recipe
Ingredients
| 3 medium-size peaches, peeled, pitted, and coarsely chopped (1 1/2 cups) | ||
| Plums | 4 Large, peeled | |
| Bing cherry | 2/3 Cup (16 tbs), pitted | |
| 2/3 cup drained canned unsweetened pineapple chunks | ||
| Plain non-fat yogurt | 2/3 Cup (16 tbs) | |
| 1/4 cup reduced-fat sour cream | ||
| 3 tablespoons Neufchatel cream cheese | ||
| Superfine sugar | 1 Tablespoon | |
| Curly leaf lettuce | ||
Directions
1. Set out an 8-inch square baking pan or freezer-safe dish. In a large bowl, toss together the peaches, plums, cherries, and pineapple.
2. In a small bowl, whisk the yogurt, sour cream, cream cheese, and sugar until smooth. Gently fold into the fruit mixture, then spoon into the pan. Cover with plastic wrap and freeze for about 3 hours or until set.
3. Remove from the freezer 15 minutes before serving. Cut into six equal portions, lift out with a spatula, and arrange on lettuce leaves. Serve with Chicken with Sage-Onion Stuffing.
