Frozen Fruit Medley Recipe
Ingredients
| Fruit cocktail | 1 | |
| 1 package lemon-flavored gelatin | ||
| Boiling water | 1 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon, frozen | |
| 2 3-ounce packages cream cheese | ||
| 1/2 cup mayonnaise or salad dressing | ||
| 1 1/2 cups tiny marshmallows | ||
| Maraschino cherries | 1/4 Cup (16 tbs), quartered | |
| Heavy cream | 1 Cup (16 tbs), Whipped | |
Directions
Drain fruit cocktail, reserving 1 cup syrup.
Dissolve gelatin in water; add reserved syrup and lemon juice.
Chill till partially set.
Soften cream cheese, add mayonnaise and beat till smooth.
Add to gelatin mixture, mixing well.
Stir in fruit cocktail, marshmallows, and cherries.
Fold in whipped cream.
To match picture make a salad mold from the fruit-cocktail can.
Remove both ends; flatten can slightly to an oval shape.
Place heavy-duty aluminum foil over one end.
Pour half of mixture into can, remainder into refrigerator tray.
Freeze several hours or overnight.
Slice and place atop lettuce.
