Ingredients
1 6-ounce package semisweet-chocolate pieces
6 eggs, separated, at room temperature
1 cup heavy or whipping cream
1 tablespoon sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
Directions
1. In heavy 1-quart saucepan over low heat or in double boiler over hot, not boiling, water, melt chocolate pieces, stirring occasionally. Remove from heat. With wire whisk, rapidly beat in egg yolks, 1 at a time, until blended.
2. In small bowl, with mixer at high speed, beat egg whites until stiff peaks form. In large bowl, with mixer at medium speed, beat cream, sugar, vanilla, and salt until stiff peaks form.
3. Gently fold chocolate mixture and egg whites into whipped cream. Pour mousse into ten 6-ounce freezer-safe wine or parfait glasses. Cover and freeze until firm, about 3 hours.
