Frosty Melon Salad` Recipe
Ingredients
| 1pkg. raspberry gelatin | ||
| 3/4 c. fruit juice | ||
| Honeydew melon | 1 Medium | |
| Raspberries | 1 Cup (16 tbs), drained | |
| 3 3-oz. packages cream cheese | ||
| Milk | 1 Tablespoon | |
Directions
Dissolve gelatin in 1 cup hot water; add fruit juice.
Chill until thickened.
Peel melon, leaving whole.
Cut slice from one end; scoop out seeds.
Drain melon well; place upright in bowl.
Fold raspberries into gel- atin mixture; fill melon.
Replace top slice, fastening with toothpicks.
Chill.
Combine cream cheese and milk; beat until smooth and fluffy.
Cut thin slice from underside of melon to make firm base; place on plate.
Spread cream cheese mixture over entire melon.
Cut into slices.
Chill until thickened.
