Frosted Ginger Cookies Recipe
Frosted Ginger Cookies are so rich and addictive. You can stop once you have eaten them. They are soft and spiced, little chewy filled with a soothing taste of molasses and butter. Frosted Ginger Cookies are healthy and gourmet.
Ingredients
Margarine -1/3 cup
Brown sugar-1/2 cup, firmly packed
Egg-1, well beaten
Molasses -1/4 cup
Boiling water -1/2 cup
All-purpose flour -1 2/3 cups, sifted
Baking soda -1/2 teaspoon
Baking powder-1 1/2 teaspoons
Salt-1/2 teaspoon
Cinnamon-1 teaspoon
Cloves-1 teaspoon
Ginger-1 teaspoon
Confectioners' sugar-2 cups sifted
Margarine-1/2 cup, melted
Lemon rind -1 teaspoon, grated
Lemon juice-1/4 cup
Directions
MAKING
1)In a bowl, beat together margarine and sugar until fluffy.
2)Add egg and beat. Stir in molasses.
3)Add boiling water and stir to blend well.
4)In another bowl, sift together flour, soda, baking powder, salt and spices.
5)Mix it with creamed mixture and beat until well blended.
6)Chill about 2 hours.
7)Take a greased baking sheet and drop spoonsful on it.
8)Bake in a hot oven at 400 degrees for 10 to 12 minutes.
9)Remove to rack and cool.
10)In a bowl, mix confectioners' sugar and melted margarine well.
11)Add lemon rind and lemon juice and mix to a smooth consistency.
12)Frost the ginger cookies with this.
