2 X 427 g/15 oz cans of beef consomme
 
2 tablespoons dry sherry
 
To garnish:
 
Curd or cream cheese or thick yogurt
 
Chopped parsley
 
Lemon slices

Directions

This makes a delicious start to the meal.
Tip the consomme into a basin and add the sherry.
If the consomme is very thick, you may need to warm it to incorporate the sherry.
Pour into freezing trays and leave until lightly frosted.
Whisk with a fork until frothy looking and spoon into chilled soup cups.
Top with the cheese or yogurt and the parsley.
Place lemon slices on one side of the soup cups.
Home made beef or chicken stock can be used in place of the canned consomme.
