Frosted Coffee Cake Recipe
The frosted coffee cake is a strong and richly flavored cake made with flour, sugar, eggs and coffee. Baked with a batter of added raisins and allspice, the frosted coffee cake is best served sprinkled with sugar and pecan nuts.
Ingredients
1/4 c. shortening
1/2 c. brown sugar
1/2 c. granulated sugar
1 egg
1/2 c. strong cold coffee
1 1/2 c. flour
1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 t. allspice
1/2 c. raisins
Directions
Mix together thoroughly first 3 ingredients.
Add the egg and beat well.
Add cold coffee gradually, mixing well.
Sift together next 5 ingredients.
Add raisins.
Stir both mixtures together and pour into a greased and floured 9 x 13 inch pan.
Bake at 350° for 18 to 20 minutes.
When cool, frost with powdered sugar icing and top with 1/4 cup chopped pecans.
