Frosted Cocoa Cupcakes Recipe

Ingredients

 
1 1/4 cups sifted all-purpose flour
 
1/2 cup cocoa, sifted
 
1/2 teaspoon baking powder
 
1/2 teaspoon baking soda
 
Milk
 
1 1/2 teaspoons cider vinegar
 
1/2 cup butter
 
1 1/2 teaspoons vanilla extract
 
1 cup sugar
 
1 egg
 
1/2 cup hot water
 
Chocolate Cola Frosting:
 
1 package chocolate fudge frosting mix
 
Cola beverage

Directions

1. Sift the flour, cocoa, baking powder, and baking soda together and blend thoroughly; set aside.
2. Add enough milk to vinegar to measure 1/2 cup liquid; set aside.
3. Cream the butter with vanilla extract. Gradually add sugar, creaming until fluffy. Add egg and beat thoroughly.4. Beating only until smooth after each addition, alternately add dry ingredients in fourths and a mixture of milk and hot water in thirds to creamed mixture. Spoon mixture into 2 1/2 inch muffin-pan wells lined with paper baking cups or greased (bottoms only), filling each one-half to two-thirds full.
5. Bake at 375°F about 20 minutes, or until cakes test done.
6. Remove from pans and cool. Frost with Chocolate-Cola Frosting.
7. For frosting, prepare frosting mix as directed on package, substituting cola beverage for the liquid. Beat until of spreading consistency.
