Ingredients
1/2 pound chicken meat, cut into 1/2 inch cubes
1/4 pound frog's legs meat, cut into 1/2 inch cubes
2 teaspoons sherry
1 teaspoon salt
2 tablespoons cornstarch
1/4 cup oil
1 slice ginger, chopped fine
2 stalks scallions, chopped fine
4 fresh mushrooms, sliced
1/2 cup chicken stock
1 teaspoon soy sauce
Thickening:
2 tablespoons cornstarch mixed with
4 tablespoons water
Directions
Season the chicken and frogs legs meat with the sherry, salt and cornstarch.
Heat a pan with the oil and when it is hot add the ginger and scallions and stir once.
Add the meat and mushrooms and saute for 1 minute.
Add the chicken stock and soy sauce and stir once or twice.
Add the thickening to the pan and when it becomes smooth and thick, serve very hot on a shallow dish.
