2 eggs
 
1/2 cup milk
 
1 cup all-purpose flour
 
1 teaspoon baking powder
 
1 teaspoon salt
 
1 tablespoon melted shortening
 
Vegetable oil for deep frying

Directions

Beat eggs on medium speed of electric mixer for at least 1 minute.
Add milk.
Mix together flour, baking powder, and salt and add to milk mixture.
Add shortening.
Beat on medium speed until well blended.
You can mix in bowl with a whisk if an electric mixer is not available; or use a processor or blender.
Stir in desired fruit or vegetable
Heat vegetable oil to 375° F.
Allow about 3 minutes for frying time of fruits or vegetables.
