 Eggs9 Small
 Milk2 Tablespoon
 Salt1/2 Teaspoon
 Parmesan cheese1/2 Cup (16 tbs), grated
 Spinach2 Cup (16 tbs), chopped
 Parsley1/2 Cup (16 tbs), minced
 Onion1/2 Cup (16 tbs), finley chopped
 Garlic1 Clove (5gm), minced
 Salad oil2 Tablespoon

Directions

Beat eggs slightly.
Mix in remaining ingredients except oil.
Heat oil in heavy medium skillet.
Pour in the egg mixture; cook over low heat.
When mixture begins to set at bottom and sides, lift cooked portions with spatula and turn gently to cook evenly.
(Eggs should still be moist and glossy.) Serve on heated platter.
