Frijoles Refritos Recipe
Frijoles Refritos is the original mexican refired beans recipe. Cooked with kidney or mexican beans, these are prepared with added green pepper, onions and spiced with garlic and chili. Flavored with broth, they can be served with tortillas or enchiladas.
Ingredients
1 can kidney or Mexican beans
1/2 green pepper, chopped fine
3 tablespoons olive oil or bacon drippings
1 teaspoon chili powder
3 tablespoons hot beef broth
1 small onion, chopped fine
1 clove garlic, chopped fine
Directions
Drain beans (reserve the liquid) and mash thoroughly.
Heat oil or drippings in a skillet, add onion, garlic, green pepper, and cook over a low heat until tender.
Stir in chili powder mixed with hot beef broth, then add the beans.
Cook slowly, stirring continuously.
Add bean liquid as needed.
Beans are cooked properly when they are completely dry.
