Frijoles Rancheros Recipe
Ingredients
| Pinto beans | 2 Pound | |
| 3/4 pound salt pork, ham, or bacon | ||
| Garlic | 1 Clove (5gm), minced | |
| Salt | 1 Tablespoon | |
| Tomatoes | 3 , chopped | |
| Onion | 1 Medium, chopped | |
| Serrano chili | 1 , chopped | |
| Cilantro | 1/2 Bunch (100gm), chopped | |
| 3 tablespoons thick and chunky picante sauce | ||
Directions
Place beans in large pot filled half full of water.
Cook on medium low heat for 1 hour; add salt pork, ham or bacon, garlic, and salt.
Cook for 2 hours on medium heat.
Reduce heat to very low and cook 1 more hour.
Refill pot with water and add tomatoes, onion, chili, cilantro, and picante sauce.
Simmer until beans are soft, adding water every 15 minutes if needed.
Do not stir beans too much or the soup will be very thick.
