Frijoles A La Charra Recipe
Ingredients
| Salt pork | 1/4 Pound | |
| Pinto beans | 1/2 Pound | |
| Onion | 1/2 , sliced | |
| Garlic | 2 Clove (5gm), minced | |
| Water | 6 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Bacon | 1/4 Pound, diced | |
| 2 tomatoes, peeled, seeded & chopped | ||
| 3 chiles serranos, minced | ||
| Cilantro | 2 Tablespoon, chopped | |
Directions
Place the first 5 ingredients in a dutch oven and bring to a boil.
Lower the heat, cover and simmer gently until beans are tender, about 1-1/2 hours.
Add the salt and cook, uncovered, for another 15 minutes.
Cook the bacon in a skillet until slightly browned.
Add the remaining ingredients and cook over high heat for 10 minutes.
Add the tomato mixture to the beans and let cook together, uncovered, over low heat for about 15 minutes.
