This week on Healthy Helpings TV, by viewer request, host Michelle Koen presents another dish from Viet Nam. A personal favorite with our staff at GNMHealth, we present to you: Pho! Pho is a succulent, assemble-it-yourself, a la carte kind of soup, not too far removed from, say Mongolian Hot Pot. The flavors are fresh and can be varied to each diner's taste. Aside from broth, the main ingredients are thinly sliced meat, rice noodles and a variety of vegetables and fresh herbs for garnishing. So, whip up a pot and call your friends for some Pho!

Directions

GETTING READY
1) Chop half an onion into thin slices.
2) Halve the red chili, chop half the red chili for garnish.

MAKING
3) In a saucepan, add the beef stock along with the onions, ginger, cinnamon, cloves, star anise and half red chili.
4) Bring to a boil and then simmer over a low heat for about 20 to 25 minutes.
5) Then remove the ginger, cinnamon, cloves, star anise and red chili from the saucepan.
6) In another pan, cook the rice noodles as the per package directions.
7) Spoon the noodles into the serving bowls and top with a layer of beef fillets.
8) Pour the boiling soup over the beef fillets.

SERVING
9) Garnish with fresh basil leaves, bean sprouts and red chili. Drizzle over the fish sauce and lemon juice before serving.

Quick Vietnamese Pho is a slow cooked soup with noodle dish, utterly delicious with the spices going in. Definitely a must make when there is less time for cooking. Rau Ram is also a great salad herb used in Pho.
