Fried Soft Shell Crabs Recipe
This fried soft shell crab recipe is prepared with soft shell crabs coated in batter and fired in oil. prepared with a mix of eggs, milk and flour, seasoned with pepper and salt, the crabs are fried to a golden brown and can be served as appetizers or a side in a meal.
Ingredients
4 large or 8 small soft shell blue crabs
1 beaten egg
1/4 cup milk
1/2 cup all purpose flour
1/4 teaspoon salt
1/8 teaspoon ground red pepper
Shortening or cooking oil for shallow fat frying
Kale (optional)
Sliced kumquats (optional)
Directions
To clean the soft shell crabs, refer to photos, above.
In a shallow dish combine egg and milk.
In another dish combine flour, salt, and red pepper.
Dip crabs in egg mixture.
Then roll in flour mixture.
In an 8 or 10 inch skillet heat 1/2 inch melted shortening of cooking oil till hot.
Add 2 or 3 of the crabs, back side down.
Fry for 3 to 5 minutes or till golden.
Turn carefully.
Fry for 2 to 3 minutes more or till crabs are crisp and golden.
Drain on paper towels.
Keep crabs warm in a 300 oven.
Repeat frying with the remaining crabs.
To serve, garnish with kale and sliced kumquats, if desired.
