Fried Soft Shell Crabs Recipe

| Soft shell crabs | 4 Large (May Use 8 Small, Blue Colored) | |
| Egg | 1 , beaten | |
| Milk | 1⁄4 Cup (4 tbs) | |
| All purpose flour | 1⁄2 Cup (8 tbs) | |
| Salt | 1⁄4 Teaspoon | |
| Ground red pepper | 1⁄8 Teaspoon | |
| Shortening/Cooking oil | 1 Cup (16 tbs) (For Shallow Fat Frying) |

Directions
In a shallow dish combine egg and milk.
In another dish combine flour, salt, and red pepper.
Dip crabs in egg mixture.
Then roll in flour mixture.
In an 8 or 10 inch skillet heat 1/2 inch melted shortening of cooking oil till hot.
Add 2 or 3 of the crabs, back side down.
Fry for 3 to 5 minutes or till golden.
Turn carefully.
Fry for 2 to 3 minutes more or till crabs are crisp and golden.
Drain on paper towels.
Keep crabs warm in a 300 oven.
Repeat frying with the remaining crabs.
To serve, garnish with kale and sliced kumquats, if desired.
