Ingredients
12 soft-shell blue crabs
2 eggs
1/4 cup milk
2 teaspoons salt
3/4 cup all-purpose flour
3/4 cup dry bread crumbs

Directions
Have your fish retailer dress the crabs for eating.
Rinse in cold water; drain.
Beat eggs, milk and salt until blended.
Stir together flour and crumbs.
Dip crabs into egg mixture, then coat with flour mixture.
Heat shortening (1/8 inch) in large skillet.
Turning crabs carefully, fry in shortening over medium heat 8 to 10 minutes or until brown.
If desired, serve with lemon wedges.
