Ingredients

 Mushrooms4 , soaked and diced
 Shrimps4 Tablespoon
 Scallion stalks2 , cut into 1 inch sections
 Bamboo shoot slices2 , diced
 Diced ham2 Tablespoon
 Salt1⁄2 Teaspoon
 Cooked rice5 Cup (80 tbs), cold
 Eggs3 Small, well beaten
 Soy sauce1 Teaspoon
 Oil1 Tablespoon
 Oil3 Tablespoon (For Rice)

Directions

Wash and soak the mushrooms in 1/2 cup hot water for 30 minutes and then stem and dice.
Shell and devein the shrimps and dice into the same size.
Heat a pan with oil and when it is hot saute the mushrooms and bamboo shoots for 1 minute.
Add the shrimps, ham, scallions and salt.
Stir once or twice and then set aside.
Heat a large pan with the 3 tablespoons oil and when it is very hot add the rice and stir vigorously.
Separate the rice with chopsticks or spatula and when it is very hot, add all other ingredients except eggs and mix well.
Pour the eggs in last, raise the heat for 30 seconds and then turn it off.
Keep stirring till the eggs coagulate.
Turn into a shallow bowl and serve immediately.
