Fried Meat Rice Recipe
Ingredients
| Cooked and drained rice | 4 Cup (64 tbs) | |
| Oil | 4 Tablespoon | |
| Julienne cut roast pork/Cooked chicken | 1 1⁄2 Cup (24 tbs) | |
| Chopped scallions | 3⁄4 Cup (12 tbs) | |
| Salt | 1 Teaspoon | |
| Pepper | 1⁄4 Teaspoon | |
| Eggs | 2 , beaten | |
| Finely chopped parsley | 1⁄2 Cup (8 tbs) | |
| Soy sauce | 2 Tablespoon |

Directions
Heat the oil in a deep skillet.
Cook the rice in it, stirring steadily and pressing out any lumps, until lightly browned.
Add the pork or chicken, scallions, salt and pepper.
Cook 1 minute, stirring constantly.
Make a hollow in the center and pour eggs into it.
Stir until they begin to set, then mix into the rice mixture.
Blend in the parsley and soy sauce.
