Fried Rice Recipe
Make Fried Rice! No other activity will relax you as much as this does. It is an effortless Main Dish. I simply love Fried Rice which is believed to be a popular Asian dish. Is it you or the aroma of Fried Rice that you happen to be making that has dragged me in the direction of the kitchen?, were my partner's words.
Ingredients
4 cups cooked and drained-rice
4 tablespoons oil
1 1/2 cups julienne-cut roast pork or cooked chicken
3/4 cup chopped scallions
1 teaspoon salt
1/4 teaspoon pepper
2 eggs, beaten
1/2 cup finely chopped parsley
2 tablespoons soy sauce
Directions
Cook the rice the day before you want to use it and refrigerate overnight.
Heat the oil in a deep skillet.
Cook the rice in it, stirring steadily and pressing out any lumps, until lightly browned.
Add the pork or chicken, scallions, salt and pepper.
Cook 1 minute, stirring constantly.
Make a hollow in the center and pour eggs into it.
Stir until they begin to set, then mix into the rice mixture.
Blend in the parsley and soy sauce.
