Ingredients

 
2 cups prawns, shelled
 
1 tbsp. wine (optional)
 
2 tsps. salt
 
1 egg white, lightly beaten
 
6 tbsps. flour
 
1 tsp. garlic paste
 
1 1/2 tsps. baking powder
 
1 tbsp. bread crumbs
 
1 cup oil
 
1/2 cup spring onions, cut
 
1/2 cup bamboo shoots
 
1 tsp. ginger paste
 
2 carrots, peeled and cubed
 
3 tbsps. oil
 
For the Sauce:-
 
1 cup tomato sauce
 
2 tbsps. sugar
 
1 tbsp. soya sauce
 
1 tbsp. vinegar
 
1/2 tsp. salt
 
1 tbsp. wine
 
(1 tbsp. cornflour, 1/2 cup water) mix together

Directions

Mix the prawns, 1 teaspoon salt, wine and egg white together.
Keep aside for some time.
In another bowl mix flour with water (coating consistency) and add remaining salt, garlic and baking powder.
Add the prawns to this mixutre and mix well.
Heat 1 cup oil, coat the prawns with bread crumbs and fry till they are golden brown.
Keep them aside.
Mix well all the sauce ingredients except cornflour, wine and water.
Heat 3 tablespoons oil and add onions, bamboo shoots, ginger, carrots and fry a little.
Add the fried prawns and the sauce.
Keep on stirring so that no lumps form.
Add wine.
Mix cornflour with water and add it to the sauce.
Let it simmer for sometime before removing it from the fire.
Serve hot with boiled rice.
VEGETARIAN VERSION:
Use 2 cups cooked, drained soya nuggets instead of prawns or shredded and fried gluten.
