Fried Noodles Recipe

Ingredients

 
1/2 pound mie (Chinese vermicelli) or vermicelli or fine egg noodles
 
2 eggs, beaten
 
3/4 cup oil
 
1 pound pork, cut julienne
 
1 1/2 cups thinly sliced onions
 
2 minced garlic cloves
 
2 teaspoons minced ginger root or 1 tablespoon powdered
 
8 cups shredded Chinese or green cabbage
 
1 cup bean sprouts, drained
 
1 cup diced cooked or canned shrimp
 
1/4 cup chopped scallions
 
1 tablespoon soy sauce
 
1/2 teaspoon freshly ground black pepper

Directions

Cook the noodles in boiling salted water until almost tender.
Drain and spread on a flat surface to cool and dry.
If possible, chill for 2 hours.
Make an omelet of the eggs.
Roll up and slice fine.
Heat 2 tablespoons oil in a skillet; saute the pork for 5 minutes.
Remove and keep warm.
Heat 2 tablespoons oil in the same skillet; saute the onions, garlic, and ginger for 8 minutes.
Remove and keep warm.
Heat 2 tablespoons oil in the same skillet; saute the cabbage and bean sprouts 3 minutes.
Add the shrimp and saute 2 minutes.
Return all the sauteed ingredients and add the scallions, soy sauce, and pepper.
Cook 2 minutes.
In a separate skillet, heat the remaining oil; turn the noodles into it and fry until browned.
Drain.
Heap the noodles on a platter and turn out the pork mixture over them.
Sprinkle with the sliced omelet.
